Here's a recipe that
can be good for a
Holiday setting.
Artichokes with Smoked
Salmon Pasta Salad.
4 medium size California
Artichokes cooked
8 oz Orzo Pasta
1/2 cup plain yogurt
1/2 cup reduced calorie
1/4 cup chopped fresh dill
4 oz. Salmon
1 tsp mustard
Cut the Artichoke
lengthwise and cut off
points with scissors.
Remove center petals
and fuzzy centers. Cook
Orzo according to
package instructions.
Combine Yogart,
Mayonnaise, Dill and
Mustard. Add to cooked
and drained Orzo, and
mix well. Gently stir in
Salmon. Season with
salt and pepper. Fill
centers of prepared
arichokes with pasta
mixture. Garnish with
springs of fresh dill.
Serves 4. For larger
gatherings double
contents of recipe.

Mama Mia's Authentic
Mexican Salsa --
1 cup fresh tomatoes,
chopped fine
1 tsp salt
1/2 tsp pepper
pinch of sugar
2 tbsp Tabasco juice
1/2 tsp garlic minced
2 tbsp each, chopped
onions & green onions
Combine all ingredients
and mix well. Use as
a dip. With fish. Or
scrambled eggs. Also
as a topping for
Mexican dishes.
