Recipe for Ice Tea: bring water to a boil, turn the flame off, add 6
tea bags (or however strong you like it - more or less), let water cool,
place tea in Fridge for a couple of hours. Pour in glass with ice. Add sugar or honey as you like. And you are done. You can try that with exotic tea for a tea drinking experience. Stay cool with a special brew.

1/2 cup loosely packed Cilantro Leaves,
(chopped)
1/2 cup extra-virgin Olive Oil
2 pounds large Shrimp (about 40)
4 Lemons (each cut into 8 wedges)
1 tsp. coarse Salt
1/4 tsp. freshly ground Pepper
1. Combine cilantro and olive oil in a
large bowl. Set aside. Peel shrimp to
first knuckle; devein. Rinse, pat dry.
Place in bowl with cilantro-oil mixture,
and coat.
2. Thread four to five shrimp,
alternating with lemon wedges on
each of eight Skewers. Gently brush
with a little of the olive oil remaining
in the bowl. Season with salt & pepper.
3. Arrange Skewers, off direct heat,
on a medium hot grill.
Grill, rotating Skewers and brushing
with olive oil as necessary to prevent
sticking, until cooked through, about
6 minutes, depending on the heat of
the grill. Lemons should be soft and
slightly charred. Makes 8 kebabs.

1 clove Garlic (minced)
1/2 tsp. Turmeric
1 tsp. Coriander
1 tsp. cumin (you can skip
the cumin if you like)
1/2 tsp. dried Oregano
6 tbsp. extra-virgin Olive Oil
1 tbsp. Lemon Juice (squeezed)
1/4 cup loosely packed Mint Leaves
2 lbs. Lamb shoulder (cut into 1 inch
cubes)
1 lb. cherry tomatoes (mixed colors)
4 small Red Onions (cut into 8
wedges)
1 1/2 tbsp. coarse Salt
2 tsp. freshly ground Pepper

1. Whisk together garlic, turmeric,
coriander, cumin, oregano, 4 tbsp.,
olive oil, lemon juice and mint in a small
bowl. Add lamb, toss to coat, refrigerate,
covered for at least 2 hours or overnight.
2. Thread 4 cubes of lamb alternating
with tomatoes and onion on each of 8 Skewers. Brush with some remaining olive oil. Season with salt and pepper.
3. Arrange Skewers off direct heat on a
medium hot grill. Grill rotating Skewers
and brushing with olive oil to prevent sticking until lamb is cooked through
(a little pink inside) about 8 minutes
again depending on the heat of the grill. Vegetables should be soft. |
